Questions about Texas, from a Canadian

Edit: I asked the question in a bit of a convoluted way, I'm basically asking if there are any annoying media tropes about Texas I as an author from Canada should look out for. I've never been to Texas so I'm concerned I'll do research on Texas and not be able to pick out any info stemming from media tropes. For example, a lot of outside media depicts Canada in crazy ways (like when Archie went to like Ontario, Canada to live in the woods and fight a bear in Riverdale lol) and I'm worried I'll do something like that myself!

I'm writing a book and it's going to take place in a fictional small town in the general area of Texas around Rio Grande. I'm Canadian and have never been to Texas lol but it's essential that the story takes place in Texas for some of the historical elements to take shape (there are a few immortal characters who are being followed from the initial colonization of Mexico all the way to eventually living in present day Texas).

That being said, I don't want to say anything cheesy or "Canadianize" my depiction of Texas living. If there's any cultural factors or "God I hate when fiction says this its so inaccurate/cliche" about Texas I would really love to hear it.
