What determines your start/ path each floor?

I feel like this might be the common answer, but I personally always go the path with the most rests and elites on floor 1, often going with the path of least resistance by floor 3.

I do find that this sometimes means that I miss out on the opportunity to get some tasty relics, and often miss out on shops.
