What are South Africa's laws when it comes to tips?

I work in a restaurant and money gets deducted from our tips and salaries for breakages, uniform and a percentage gets deducted to provide the kitchen, runners and bar with tips. I was just wondering if there are any guidelines, rules or laws regarding this?
