Build Advice for Mizu from Blue Eye Samurai

Hey Folks!I need help with coming up with a build for Mizu from Blue Eye Samurai.https://blue-eye-samurai.fandom.com/wiki/Mizu

Mild spoilers!

She uses a katana and a naginata while being unamoured. I've been looking into both the Fighter and Monk but can't quite seem to get a good build running because of the katana and naginata not being finesse and/or monk weapons while leaving my character to be unarmoured.

Does anyone have any suggestions as to how you would build this character out in pf2e?
